They need time to adjust, and many times they were simply bred by a breeder who did not work with them from birth. So they are not used to humans yet. You must show them that even if they nibble or run you will not harm them. Let them warm up to you, but that does Not mean let them run freely or refuse to ever come out of the cage. Just work with them gradually, more and more each day, and they will warm up to you nicely.

Well the hamster is in a new surrounding, new smells and sights and probably different sounds as well. Give her a little bit of time to adjust to her new surroundings, maybe a day or so. And leave her alone during the day for the first day you have her, because hamsters are nocturnal animals so she might feel more comfortable at night. After a day or so, try handling her very carefully. Quietly put your hand in her cage and allow her to smell your fingers. If she runs away from your hand just wait patiently and she should become curious enough to come out and take a look. If she steps onto your hand carefully lift your hand out of her cage and then you can cuddle with her, but don't play too rought the first few times you take her out of the cage. Let her get used to being handled, because if you got her from a pet store they probably didn't handle her much. Also, there is a chance that she might bite or nibble on your fingers. Just be prepared for that, and don't make any sudden moves that might scare her away. The bite shouldn't hurt very much; most people react out of surprise. If it happens it shouldn't even break skin.

You would be scared too if a strange giant kept reaching for you! Give it time, keep contact with it, talk to it for voice familiarity, and try to do something so it can remember your scent. Hope that works! ;)

unfamiliar surroundings. I'd just give it time. Like a few weeks. After awhile it'll get more comfortable

It's because she is not yet comfortable in her surroundings.
Give her some space and time, preferably a few days, to adjust.
