Not an immortal, but I'd go with Butes (an argonaut); while the rest of the crew stopped their ears when approaching the sirens' shoals, he dove overboard in pursuit of the sirens' song and was rewarded by being rescued by Aphrodite and spending some quality time with her.

Okay, now I'm not very good at Mythology, so bear with me.
I would choose Echo, I think she was a water nymph. She fell in love with (I think his name was) Narcissus, whom only loved himself. The story really isn't a happy one, But somehow fitting.
Echo doesn't have Narcissus, but now she always gets the last word.
