Yes, just set a very high reserve price like $9999999999999
The reserve price will never be met & you will still get to see how high people bid & you will not have to sell it because the reserve price will not be met.

Absolutely NOT. Once you list an item on Ebay, whether auction-style or as a Buy It Now, you are committed to sell it if you get bids. You also will have selling fees to pay. If you want to know what it is worth, try searching for your item ON Ebay and see if anybody else is selling it. Check on their starting prices and also if they have any bids on it.

The best way to do that is to go to

ADVANCED SEARCH

and search for COMPELTED LISTINGS

You will get a list of everything listed (sold or not) over the past 30 days that match your key words.

But what you can do is try searching another item that you are selling or something similiar then you will know how much it's worth.

If you place your items on Ebay that is a legal binding contract if someone bids on it.

becuz once you put stuff on ebay, that means you're selling it.
