Bunnies multiply rapidly. The two are associated with the season of spring, more than the Easter holiday specifically.

Many of the symbols of easter are taken from the pagan holiday of Ostara. It was celebrated during the spring equinox. This was the time of the "rebirth" of the earth. It is the time when the "sun returns to the earth", plants bloom, many animals give birth to their young, etc. That is why you see bunnies, eggs, lambs, etc around easter time.

Easter was placed at this time of the year to allow for an easier transition for the pagans of the Roman Empire to the newly formed christianity under Constantine.

In spring you have rebirth. Many species, including rabbits, are procreating in the spring. It's just the season of the year that gives us those symbols, which have nothing to do with the spiritual and religious meaning and symbols of Easter and the ressurrection.

Also, German settlers in America are said to have brought over the tradition of a bunny named "Oschter Haws" who would visit houses on Easter eve, leaving colored eggs for children. Easter eggs were painted different colors to represent the sunlight of spring. Christians later used eggs to symbolize the rebirth of Christ.

Easter is a pagan holiday, celebrating spring and fertility-hence the bunnies and eggs--both signs of fertility. Those pagan practices were adopted to coincide with the catholic and christian celebration of their god's son's death.
