are you meant to cut the dead leaves back as they die and then what do you do with them through winter and after are you meant to totally cut them down in spring?

Needs warmth. If growing indoors keep in full light with shade from hot sun. If outdoors rich soil needed and full sun or part shade. Lift the plant before the first frost, cut back long roots and reduce the top growth (leaves) back to the newest 2 or 3 leaves. Don't rip off the dead leaves just cut them back to the base of the leaf blade. If you don't want to lift it just cut back the leaves but remember not to go down past the base of the leaf blade

Unless you live in a tropical zone and you planted your Ensete maurelii, a tropical banana, directly in the ground it will have to be dug up and stored or treated as an annual. Dig up your plant before the first frosts occur. Place the plant in a burlap lined box, laundry basket or old flowerpot. Bannanas grow from a corm, like a canna bulb, so roots do not need to be included as long as you get all of the corm. Trim off all the leaves except for the top one for storage. A fungicide can be sprayed on your plant before storage to help keep it from rotting. Place your plant in a cool dry place like a frost free garage, or a basement.

If you live in a mild area you MIGHT get it through winter out side by wrapping it in fleece and/or bubble-wrap. I have one (in Jersey, Channel Isles) which is looking o.k. so far....
Otherwise, as the others have said, dig it up and take it inside.
