I recently found a fair amount of mold in my electric kettle after I had accidentally left it out for a week or two. I'd rather not throw it away, but I'm wary of making anything in it now.

Is there a way I can safely sanitize my kettle?

If it's a metal, glass or ceramic inside it's a non-porus surface and you'll probably be fine - but - you can always fire it up full of white vinegar, let the hot vinegar sterilize it. I'm also a fan of cleaning with bleach but the vinegar is safer.
If it's a cooker it wouldn't be plastic - I get rid of plastic kitchenware which has had food sit in it for a long time because I've noticed the plastic absorbing colors and odors...actually, I don't use plastic containers to store food anymore because of that...

Put a half cup of household bleach in it and fill w/water. Let that stand for a couple of hours and then rinse very very well. That'll kill everything growing there. Good Luck and God Bless

Soak it with bleach then boil some water in it.

Unless are a real neat freak I don't see any problems.

Try this first and If it don't smell right or look right toss it.
