Do they let the employees take it home? Do they throw it away? Do they give it to a homeless shelter?

I take it there are different rules for food in different countries.

They should donate it, but most of them don't. They discard it instead because they're afraid of getting sued if someone claims they got sick from it.

Left over food at any restaurant can not be given to a homeless shelter of any sort due to health regulations and issues. Most of the left over food from restaurants, hotels, hospitality centers, etc go to local farms to feed the livestock.

If not, then it simply goes to waste. This is why food management is very important and why McDonald's, Burger King and others spend so much $$$ to research trends and how much should be cooked and made available.

They should give it to the homeless--or let the employees have it--but usually they are required to throw it out. They do not want to be sued if someone gets sick from it (besides that I believe it is the law to do so).

There was one McDonalds back in NY that gave their food at the end of the night to the firefighters across the street from them. I don't know if they are still doing that.

leftover veg gets blended to make & thicken soups and sauces, meats get chopped up for tomorrow's curry/ stroganoff/ stew etc, leftover fish becomes tomorrow's fish pie. Food cannot be donated as the giver would then be responsible for any consequences of poor storage or transportation practices. Anything which really can't be recycled into tomorrow's menu (eg left over fish pie/ strganoff/ curry!) goes in the trash. If we let employees take it home, it is too tempting to make sure the stuff they want is leftover, so as we don't have leftover police, it's a no no.

Some do.

There is a buffet restaurant here in Montreal that donates their leftovers at days end to a mens' shelter down in the bowery.

I would like to think that they all did, but I'd guess that they don't.

You can tell because there'll be a sign in the window saying they make the donations, if they do.

I don't know about buffets but I use to work in a bakery and with what ever donuts and pastries were left over after closing a mission would pick up and give them to the homeless for breakfest the next morning.

I would hope they left employees take it home, but I doubt they do. It's probably thrown away. If they let you line up at the back door and take what you wanted, I'd be the first one in line. Not because I can't afford to buy my own food, but because I don't like to cook.

What i've ever heard from one one five stars hotel i used to have a part time job couple years ago. They throw it away, they won't let the empoyees take it home nor give it to a homeless. It's their policy, that's what they say.

Typically it gets thrown out.

It has to do with health regulations concerning temperatures and proper storage of cooked food.

Unfortunately in many cases it can not go to feed the hungry, as the organization can not risk the health violation or any possible law suit that may result from illness.

In some area the leftover food from some places is given to farmers to turn into a mulch
