Chevron Premium whenever you get the chance.
Texaco Premium,2nd choice
Any Premium after those 2.
There's more to fuel than Octane.
Seems that some of the answers you've gotten missed
the "EFI" part of>>
"This is a 2007 1200 sportster with EFI"
If you're interested in using the most consistent,highest quality fuel commonly available in USA,,
It's ChevronSupreme,then Texaco Premium.
After that,,
pretty much any "premium" will give you the most of what your engine needs in terms of all the other properties required of motor fuel,,,besides just octane.

Premium unleaded, 91 octane or higher.
ALL my bikes have run better on Premium. Most of them hated GULF (except for Cumberland Farms, which is hard to understand, as they ARE Gulf). Every other brand has worked well here (NH).

what ever it calls for in the manual Burning premium in a bike without a high compression motor does absolutely nothing. If it calls for 87 use that. Octane is a fuels ability to resist pre-ignition

I put BP premium only this gives the best proformance and the bike has no run on after shutting it off.

if u want to find out the easy way why others have said premium, set 1 of the odometer's as a trip meter. run thru a tank each of premium, the plus, and regular, and do comparisions on miles per tank, ease of starting, and overall performance. u'll find out that premium is the juice that's needed.

i ride a sportster, and i get the best performance with premium. all other grades make it run real bad. if u want it to run good, it needs good gas.

put 87 unless the owner's manual states differently! Harleys are not designed for performance so I don't see why the engine would need a higher octane.

it'll run on any gas, but premium will get more mpg and better performance. as you rack up the miles it will need the super moreso to make up for wearing tolerences.
