Ubuntu and all other linux distributions, as well as most operating systems, including Windows are written mainly C and C++ and include assembly code.

OS (the kernel) is Linux and that is programmed in C mainly. Other applications above it are done in various languages - C/C++, Python, Perl etc.

Linux kernel and most of applications are written in C.
Other applications are developed in Perl, Python and some in Java.
