gawd I can think of a lot of funny things associated with this.
But the best one I can think of would be to glue rat poison pellets all over the fence. When the donkey has chewed on enough of the fence, the donkey will die and therefore no longer be chewing on the fence.
or you can wait for the donkey to chew on the fence and smack it accross the face with a 2x4 that should do it as well.
My uncle once shot a goat in the head at range with a rifle for eating his blackberries.

*G* Any question that includes donkeys is a good question!
I really have 0 donkey knowledge, but I'm supposing you're looking for some kind of bitter (or something) element, something they'll find unpleasant in their mouths? Since I know nothing about that, my mind went to a sort of cap for the fence--can you take a flat sheet of metal, bend/mold it over the top of several fenceposts and nail it in place? Then keep going until the fence is entirely "capped." Would this be at all feasible/effective? Or do donkeys, like goats, eat anything?

--You can put Chew stop on it, which can be found in almost any horsey store...which is an spray or run that you can put on the fences, and gives an unpleasant taste.... You wont find a donkey or a horse near a fence with this on it! Once they try it once they won't go back to it! But don't worry, its obviously non-toxic!
--another brand name is QUITT stop...which is something you can mix in with their feed-- a lot of donkeys and horses wood chew because of a malfunction in their gastic juices... so if you want to tackle the problem right down to its roots, instead of coving it up then try the QUITT stop! Maybe call up your vet first as feeding sceduals are very sensitive.

Horses & donkeys chew wood.I call them over grown termites.At horse suppy or maybe at home depot they have this stuff called no chew you paint it on the wood & theyll leave it alone.It works I used it.But call different hardware or a horse supply olace tell them you need it on wood because the donkys you cant use anything it has to be animal safe

Try lemon juice. You may end up having to put tin wrap nailed to it. Amonia can be harmful to wipe on the fence, but a friend of mine used it with success.

My friend uses a electric wire across the top of her fence for her horse! It just shockes them :)
