the are of cutting a bush into a set designe is called topery. The bushes are often box trees as they respond well to cutting, but you can use a number of small leafed plants including juniper. Bay can be ysed and the leaves may be dryed and used in cooking, but they are a little old fasioned.
One question you should ask yourself before you buy is do I want to spend less and get a juvinile bush to cut into shape myself, or get a redy made one? if you get a redy made one, a box tree is a good option as it grows slowly, so it is easyer to keep it in shap. privet or bay grow faster, so are cheeper, but take a lot of maintinance.
A big B&Q or Homebase will do these for about £60-£100

Could be box, conifers or bay or twisted hazel, most garden centres have a selection of trees they are training into an interesting shape.. called topiary or tree sculpture or bonsai depending on the size... choosing the type of topiary you have depends on whether you want all year round foliage or whether you want to see the bare stems in winter

There are three main sorts not including the plastic ones.
* Box trees, small, close clipped, slow growing a 3ft version will be £30 or more. Spheres, cones, shapes, no lollipops.
* Bay trees, bigger leaves, usually a tall cone or lollipop dunno about the price, up to 5 ft easily nothing under 3 ft. Can take fairy lights etc.
* Sculpted leylandii (or whatever the variety is) can be cut into spirals, multi lollipops etc harder to find, don't know the price, from 4ft upwards.

The bushes as you put it are called box, Buxus Ssempervirens(common box)
others are-
Ssuffruticosa(dwarf box)
Latifolia Maculata(sunshine box)
Blauer Heinz(Blue Henry)
To buy decent size box it can be a bit expensive so shop around.
The pruning of these shrubs is called Topiary and not the shrub.

Hope you find what your looking for.
