why is there a bachelor of 1) business, 2)arts, and 3) science for, example, a degree in econs and finance? what are the difference?

Universities break their different majors into "schools" - school of science would include things like business, finance, accounting, biology, chemistry, marine bio, math, etc. School of arts includes languages, history, anthropology, art, music, etc. School of Secondary Education would be teaching curriculums. Ie, my husbands Business Administration degree is a Bachelor of Science, whereas my degree in American History is a Bachelor of the Arts.

They usually have different core components and requirements of study, pertaining to the major.

It depends on the particular school and particular degree but in general the science degree with have much more math, the arts degree will be a broader education and the business degree more focussed specifically on business (probably with a lot of economics and commerce).
