Scatty has the main reason, I think. When you are singled out as a group and people make sweeping generalizations like the one you are making, and it happens all the time, that can feel kind of oppressive. How would you feel if you constantly heard things like, "I do respect all religions but why is it that [insert whatever religion, nationality or other group you might have been born into ] tend to be so racist?" I imagine you would feel annoyed at best.

It matters to Jews (and many other ethnic groups) that they are a minority in most of the places they live. They may be the majority in Israel, but that is a state with relatively few allies... whether you believe that is primarily because they are an apartheid state or because most most of the world is actually just anti-semitic/anti-Jewish is irrelevant. My point is that even if they are a privileged minority in many ways, that probably tends to make generalizations more offensive to many of them.

Obviously, in the case of the Jewish people, 1000s of years historical oppression, one of the largest genocides in history, and ongoing hatred are all factors.

You misused the word Jewish. We are Jewish people.
If you study our history, you will find that we have been oppressed through out the ages.
It's just simple history.

Because they have been oppressed for centuries, but I don't know why. My guess would be because they rejected Jesus as the Son of God. But that is just a guess.
