Canasta would be my favorite.
Gin is another. Poker can be played with 2, though many people find it less fun that way. You should be able to find rules for these online (Pagat.com or any number of other sites).
There was a game for 2 or more I used to play that we called Golf.
Each person gets 4 cards dealt face down in front of them in 2 rows. You can look at the bottom 2 (I'm not sure if this is just once, on your turn only, or anything you want ... I would lean towards anytime you want), but not the top 2. The rest of the cards go face down in a draw pile in the middle.
The goal is to have the fewest points.
On your turn you:
1. Draw 1 card from the draw pile or take the top card from the discard pile.
2. [if you want] replace one of your 4 cards with the card you just took.
3. [if you want] "knock" to signify you are satisfied with your cards.
4. discard (either the card you replaced in step 2, or if you chose not to replace any, then the card you drew in step 1).
Once one player knocks, the other player gets 1 more turn, then you turn over all 4 cards, and add up the total (ace is 1pt, face cards count 10). Keep a running score and play until someone reaches a set amount (50, 100, or whatever), or a set # of hands.

Ticket to Ride plays very well with two players, and it works very well as a get-together game for up to five players. It's one of those games that is very easy to learn, but you can come up with some nice strategies. In the game you race to connect cities together with trains, and there are versions with maps of America, Europe, and I believe Germany. Jenga works well with two players as well - it's the game where you have a tower of blocks and you try to slide blocks out without knocking down the tower. I've enjoyed the card game Race for the Galaxy, it's a bit more complex than these two but not much more so. It has a classic golden age science fiction feel, and like the previous two games works well for two players but scales up well to a couple more if you have some friends over. Don't forget old classics like Backgammon or chess.

War- you each get a deck of cards. You put the deck face down. Then you both pull a card from the top. Whoevers card is higher gets to keep both of the cards. If you both have the same card you go into war. To do war you lay 3 cards face down, both you and your friend. Then you put one card up. Whoevers card is higher gets to keep all of the cards. And then you just keep on playing untill someone runs out of cards.

snap. you each give out the same amount of cards to eachother. then one at a time place down a card-without seeing the cards until two of the same cards go down. then you place you hand over the cards before your apponant does and say snap. if you win the cards, you put them together with your pile.
pairs- place all 52 cards down so you cant see the cards making a couple of rows.
then one at a time turn over two cards. if they are a pair you pick them up and put them in a pile to one side. you take another go until you dont have a pair. if you turn over two different cards you have to turn them over again and its the other persons go. you have to try memorise where the pairs are. the one with most pairs win.
