I was listening to a basketball game and heard the commentator say that the guy made a shot off-screen? What is an off-screen shot?

First, a screen is when you have the ball and one of your players gets in the way(blocks) the person defending you. This creates a little room for you to take an uncontested/open shot .
When you get past the sreener thats the off sreen and you shoot. This can be done buy multiple team mates also.A double screen. Screener must be still as you move behind or past him.

It simply means the ball-handler's defender was screened, giving the shooter an open look or an easy shot due to mismatch.

When a guy gets a screen
and then has a different person on him
and then he shoots while the new person is on him
