Are they flying around the light fitting which happens to be in the middle of the room, or would they fly centrally in the room regardless of where the light is.

Flies are sensitive to heat (just think, they need to detect warm blooded animals to feed on). A light that has been turned on at night, will have residual heat left during the day. This would attract flies of course.

Nevertheless, assume it is a long winter, no heating in the room and the light has never been turned on. I doubt that a fly would be more likely to fly around the light bulb (which is going to be very cold) than around any other place in the room.

If you don't have a light bulb in the middle of the room, but a lamp on your nightstand, a fly would be attracted to the lamp on the nightstand, so the fly does not fly centrally in the room.

In general, a fly will fly towards a source of light and heat it can sense wherever it is located.

It depends on the species of course, but some flies use pale-coloured items as a congregation point.

For example in a field, clouds of small flies may gather around one person who is wearing light-coloured clothing, while another person who is clad in dark clothes have no flies around them at all. You can test this phenomena by laying out a sheet of newsprint in a field on a quiet summer's evening. There will be soon a swarm of flies above it.

And light bulbs? They are white and (unlike a ceiling) a light bulb can be flown around.

They just fly around high just below the ceiling usually in circles which looks like they're flying around the light. I think they're trying to find a way out, if they were outside they'd simply fly up and over to get away, when they try that inside they encounter the ceiling. Cos they're so dumb they just fly round and round in circles (never going back the way they came in for some reason).
