It's untreated white cotton string, used for trussing birds and tying up roasts. You should be able to find it any supermarket.

AKA butcher string...used to tie up turkeys, or Cornish game hens...specially formulated to not burn up during the cooking process. as the person at the meat counter in the store, they will show you where it is.
