Reply asap! But read this 1st-it must not be chocolate as my mother is allergic. I can cook, but i am 14 so dont make it toooooo hard! I have cooked plenty of cakes before though, any ideas will do!

Berry Sour Cream Cake

1 cup butter, softened
1 1/4 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups fresh raspberries -- you can use any kind of berries, or peaches would be good too!
1 cup fresh blueberries
GLAZE
2 cups icing sugar
1/4 cup butter, melted
1/2 teaspoon vanilla extract
2-3 tablespoons milk

Cream together butter and sugar. Add eggs, sour cream and vanilla extract; mix well. Combine flour, baking powder and baking soda; gradually add to butter mixture.
Spread into a greased 13" by 9" by 2" baking dish. Sprinkle with raspberries and blueberries.
Bake in a 325* oven for 40 - 45 minutes or until a toothpick inserted in center comes out clean.
For Glaze: In a mixing bowl, beat sugar, butter, vanilla extract and enough milk to achieve a drizzling consistencey. Drizzle over warm cake. Cook on a wire rack.

The easiest cake you can make is a boxed cake. To change it up jsut a little bit you can do the following: 1 - Box cake mix (chococlate/vanilla/red velvet, whichever you prefer) 1 - 5oz box of pudding mix (same flavor as the cake) 4 - eggs 1 cup Water 1/3 cup vegetable oil 1 - 10" bundt cake pan Preheat the over to 350 degrees Put all of the ingredients in a bowl. If you have a stand mixer, put it on medium til all ingredients are mixed and then turn it on high for 2-3 minutes. If you just have a bowl and an hand electric mixer then do the same as you would a stand mixer. No electronics of any kind? Mix for atleast 10 minutes. Grease the bundt pan so that when you flip the cake over it will come out when finished cooking. Pour the batter into the pan. Pop it in the oven and let cook for 1 hour. BUT!! oven temperatures vary so check it at the 50 minute mark to see if it's cooked. Stick a toothpick in the middle of the cake and if it's still moist let cook for another 10 miuntes. If clean, take it out. Let the pan sit for 10 minutes before flipping. If you have a cake stand or a nice plate (big enough to fit the cake) then flip the cake over that. Let the cake cool before putting icing. You can get decorations at your local craft store or even the grocery store. Now there's lots of little things that you can do to change this recipe up a little bit. If your mom isn't allergic to nuts I would suggest a chocolate cake with macadamia nuts or hazel nuts topping and caramel drizzle. You can get some chopped macadamia/hazelnuts and spread them at the bottom of the bundt pan and then pour the batter over it. The caramel sauce you can buy a bottle of it at the store and when it's time to serve her the cake you can warm it up and drizzle a bit of it over the cake. Hope this helps!!

Sorry , I am kind of late to answering but I have the best cake for you! Its really easy, no chocolate involved and its soo delicious-

Quick Yellow Cake
2 cups flour
1 1/3 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup milk
2 teaspoons vanilla
2 eggs

Mix dry ingredients in lg bowl.
Add shortening, milk and vanilla.
Beat on med for 2 minutes.
Add eggs and beat for 30 seconds more.
Bake in greased 13x9 pan for 35 minutes, or until pick comes out clean.


This is what I always frost it with and it tastes great, Obviously you can use whatever icing you and your mom like!

Buttercream Frosting
4 cups powdered sugar
1 cup unsalted butter
1 teaspoon vanilla extract
3 tablespoons milk

cream together sugar and the butter.
add the vanilla.
add the milk and beat on a medium speed until it is a spreading consistency.
if needed add additional milk, 1 teaspoon at a time until desired consistency is reached.
I usually top with chopped strawberries or sprinkle jimmies on it just to make it a bit more festive!

Make a sponge cake then fill it with strawberry or raspberry jam and fresh cream. Dust the top with icing sugar and halve some strawberries (to look like hearts)
2 eggs whisked with 3oz sugar til REALLY light and fluffy then carefully fold in 3oz self raising flour. Put into a 6" greased and base lined tin and bake for about 30 mins at gas 5. I'd be over the moon if one of my lads made a cake for me!

Bake a regular sponge. When it is cooling prick it all over with a sqewer, and pour over a mix of cold diluted coffee and Bols Amaretto Liqueur (or your mums favorite liqueur), let it soak in, and cool in the fridge for an hour, cover with whipped cream, or spray cream out of the can. And put back in fridge till you need it. Sprinkle over some crushed Ameretto biscuits. Its absolutely delicious, you might want to make two, because it will go really quickly!

Why don`t you try to make Blueberry cheesecake, before that make sure that your mother don`t allergic with the cheese.

Go to my blog and you'll find one. It is quite anti-allergic, because thereis no chocolate at all, but ask somebogy to help you, it is difficult a little.

-and all

Instructions:

1 lg Container of cool whip
1 sm Can crushed pinappple juice
-and all
1 pk Vanilla instant pudding (4
-serving)

Cake: Dump in bowl and mix with electric beaters til fluffy. Pour into a
13X9inch lightly greased pan and bake 325F for 30 min or til done.

Topping: Dump in bowl, beat with electric beaters about 3-4 minutes or til
mixed and set. Spread on cooled cake.
