Visa Requirements in America make it difficult for me to get one even if I'm transiting.Need help on alternative route.

Puedes ir por Japan Airlines a Tokio con escala en Vacouver, Canada; de esta manera no necesitas la visa gringa y ya en Tokio tomas un vuelo a Hong Kong.
Eso sí el vuelo sale muy temprano.

Common sense tells me, if you take a Mexican airline from a major city in Mexico and they fly non stop to Hong Kong .. well,

AeroMexico flys directly from Mexico City/Tijuana to Japan now. Then get a flight from Osaka to Hong Kong . . .

You could fly direct to any European city then connect from there, e.g., AeroMexico to Paris then Cathay Pacific to Hong Kong.

You could also try to connect through Canada.
