if its a tomato sauce, add a couple whole peeled carrots while simmering the sauce. discard the carrots once the sauce is done....this will absorb the acidity without adding sodium or sugur.

For acidic tomato sauce, simply add half of a large carrot and let it simmer with the sauce. The carrot takes out the acidic taste naturally. =)

Use the opposite of an acid - an alkali. Things like cream, milk, even water or oil, butter. I would steer clear of salt in particular as it can make an acidic sauce taste harsh.

Add 1 or 2 Tbsp.unsalted butter, mix it in and taste. Add more if needed. It should balance out the acidity. Sugar also helps reduce acidity.

working in a couple of italian resturants the owner of which were italian and my step mom being also...a tbsp of sugar reduces the acid...remember you are not making a sweet sauce but i use for a small pot of sauce 1 tbsp and it works
