I love the taste of real butter, and I don't buy into the low-fat / no-fat diets out there. I think we need a good dose of good fats everyday. Currently I bend softened butter with extra light olive oil in the blender and make spreadable butter.

Does anyone have any tips on making real butter spreadable and healthier?

For certain foods like sweet potatoes, yams or popovers, my family LOVES honey butter! I bring butter to room temperature, smoosh it with a fork, adding honey to taste. It doesn't make it any healthier, but it sure is good!

You can also do this with garlic or other favorite flavors.

Your solution is one of the best. Other goods oils to try are Canola, grape seed, sunflower seed, and not the extra light olive oil, but the extra-virgin olive oil.
You are somewhat right about needing oils on a daily basis. Our cell membranes are made of fats and waxes, so to completely eliminate them would be to die. But don't get smart-a** and think you know it all. We actually need about 1 Tablespoon a day -from all sources, not just added on butter.
