It's quite easy " Ti amo".
Of course you could say more using the most romantic, real language of love, namely Italian. A very common and nice sounds when you refer to your dear one ( the man/woman you are very attached to, in love) as "Tesoro mio,...", meaning "My treasure..".
You might tell him that He is the sweetest man : Tu sei un uomo dolcissimo!!

Unless, you don't want to declare your love for this man I wouldn't tell him "ti amo". If you want to thank him for being really kind try something like, "Ti vorrei ringraziare per la tua gentilezza. Sei molto dolce ed apprezzo tutto cio che stai facendo per me." (I would like to thank you for your kindness. You are very sweet and I appreciate all the things you are doing for me).

"Ti amo per l'uomo che sei" or "Ti amo per come sei".
The latter means more exactly: "I love you the way you are".
