briskets are not as tough as rounds..place in large covered pan or crock pot, add all juices from pkg, water to cover meat and flavoring packet from corned beef. Cook on very low heat {water just barely bubbles} check pkg directions for time. the last hour or hour and a half add small potatoes and carrots, the the last 5-10 min had quartered cabbage, or low crock pot heat with potatoes and carrots cook all day 6-8 hours, last 1/2 hour add cabbage. meat should be very tender, almost falling apart. slice across the grain, serve with your favorite mustard..enjoy.

Easy -- you buy a corned beef roast in the meat department of the grocery store like where they have the hot dogs and hams (usually 2 to 4 pounds, wrapped in plastic.) Follow the directions on the wrapper which usually means cooking it in water in a pot with a lid on the stove for 1 and a half to 2 and a half hours (depends on the weight) OR in a crockpot for 6 to 8 hours. I usually put it in a 350 degree oven for about 15 minutes after draining the cooking water to brown the top a little but you don't have to do that. Slice it across the grain with a sharp knife. Yummy!

I made it the first time the other day. I bought the one that comes packaged with a lil pack of seasoning. Then I boiled it 50 mintues per each pound. I had 3lbs, so I cooked it for about 3 hours. Then I sliced cabbage, onions, and carrots, in another put and put that to boil in salt water. When all is done, I serve the veggies with melted butter, the meat with a lil dijon mustard, and some long bread on the side. My first time having an Irish dish. It was soo good. and it taste better the next day served cold and thin sliced on bread.
