You can make pretty much any kind of meal in 30-60 min if you just find a short cut to it. Except maybe a large turkey. Last nite i made tender potroast in a hour!
I bought a large round steak put a little enova oil (healthier oil) in a pan and browned it with some onions i added a package of beef stew seasoning and 2 cups water (read pakage) and chopped up some potatoes in to chunks not to thick so they would cook but not real small. bout half inch. And threw in some baby carrots. put my meat in and covered it with tin foil took bout 50 min plus prep total of 60 min. And its not the thick poat roast but that steak was so good tasted just like good pot roast. or a beef stew but prett good.
Another easy meal i like is goulash brown some hamburger add pasta sauce from store little garlic and dried erbs some fresh mush rooms cook till mushrooms are tender cook up some macoroni noodles mix all up can add corn if you like i usally serve it on the side or i serve this dish with a salad and top the pasta mix with a little cheese and serve with bread sticks or french bread.
fried chicken home made in like 30 min. i buy boneless skinles breast cut them in to 1/2 strips maybe just a little thicker depends on how fast i want them to get done. dip in flour egg and flour again and put into hot grease. I usally let grease warm up while im preparing the chicken strips. If im feelin cheeky i will make home made mashed potatoes but if not i will use instant. homade take bout 25 mind instant take bout 8. Chicken strips take little time to fry id say bout 15 min a batch y ou will knwo when they are done. I also make a quick homemade poor mans gravy. Add little butter to pan make 2 tbls mix in a couple tablsppons of flour and add cup and 1/2 to two cups of milk. If it dont thickin well enough add little flour and milk together in a seperate bowl and add to gravy. never put flour in the gravy will lump badly. serve will salad or frozen green beans (taste fresher less salt)
I buy alot of premade stuff and take it home and doctor it up. Like baked beans i will add onion, bbq sauce, garlic. then serve them with brats, kraut, and maybe pasta salad with veggies or just a veggie salad. whole thing 30 min
Another meal i make into two. is spaghetti. The first nite i will mix up some store bought sauce with some hamburger. and poor over top of angel hair. (angel hair takes very little time to cook and i love it) then the next nite i will use leftover speghettie sauce to make homemade pizza. Buy a premade crust or a mix.(I prefer the mix taste better to me) add your speghetti sauce on top of it tope with mozzerella cheese and a little cheddar. Can add soem crisp crumbled bacon or onions if you like. Makes a cheeseburger pizza. total cook time 20-30 min
Be creative lower price cuts of meat usally take the least amout of time to cook if you want to be more healty the option is there. Steamfresh veggies take like 8 min in the microwave pop n a couple potatoes in microwave till done bout 5 or 6 min depending on size and microwave and bake some skinless boneless breast. Want more ideas feel free to email me. Just because your short on time doesnot mean you ahve to eat tv dinners and frozen pizza just gotta be creative!!!!

Unless you're eating a lot of hot dogs and burgers or using a lot of pre-prepared, packaged garbage from the frozen foods section, dinner is going to take at least an hour to prepare and cook - if you want it to be nutritious and inexpensive.
What I would recommend is getting a crock pot. Then you can prepare dinner before you go to work and have it cooking safely all day.
When you get home, most of your work is done. Just toss a salad, maybe make some quick mashed potatoes (pre-boil and peel them the night before or in the morning, then reheat in the microwave and mash) and microwave some veggies, and you have a meal ready to serve less than thirty minutes after you walk in the door.
Crock pot recipes come with the crock pot, and there are thousands of excellent recipes for crock pots all over the web, at places like http://www.cooks.com
The other really nice thing about the crock pot is you can use cheaper cuts of meat in it and they come out tender and juicy and delicious!

Steamed or poached chicken breast (season as you like) which takes around 25-30 mins and cous-cous. If you get the instant variety it only takes about 5 mins. Serve with veg of your choice.
Alternatively get a slow cooker and prepare your meal before you go to work in the morning - you can eat as soon as you get home then. The best recipes are the ones you make up as you go along. Just put in all your favourite veggies and meat, plenty of stock or sauce and let it cook itself.

there's these two cool products that i saw on tv. they save you time. one is the infrawave oven from black and decker, and the other is a little grill that works in the microwave! The infrawave uses infra red wave technology that cooks your food inside and outside (used by top chefs), and the grill has these special conductors that lets you use it like an outdoor grill. With both products you can make a meal in7-15 minutes, even if they are frozen meat or chicken! I'm going to buy one. Look for them online they really work my friend told me..
