Honestly, you are in shape enough to begin training now.
Just get started.
Find a good school.
Check out all the schools in your area.
Observe classes.
Never sign a contract.
If you feel like you want to start getting your body ready practice breathing deeply. Suck in, hold it, release it out. Use your diaphram to breath, not your lungs.
Start strecthing daily.
Start doing push-ups, dips, sit-ups, leg lifts, crunches...all the isometrics you know and love.
Good Luck!
Never pay for rank tests.
Ask to observe their sparring exercises.
Ask questions.

As suggested above, as long as you are in reasonably good physical condition already, you should have no difficulties hitting the ground running.
Your instructor likely has a lot of experience in bringing newbies along slowly. After all, there is no benefit to overworking someone the first day. They won't come back!
My personal advice to you is for you to take it slow. What I mean is don't overwork yourself. Go at the pace the instructor sets and at which your classmates are training. All good things take time and what you are embarking upon is a good thing.
Happy training!

when entering karate training, your instructor will give you an exercise regimine. also, you may wish to start eating more protiens. i understand it goes against your vegetarian ways, but the protiens found in beef are the absolute best for building lean muscle. at the very most, beef stock would be an acceptable alternative to actually consuming flesh.
