I have very fair skin with light blue eyes and at the moment I have dark brown hair with a hint of auburn.
I want it to be even more on the auburn side.
What hair color do you think would be best for me?

Since you mentioned you already have some auburn highlights, and I will assume this is your natural color, it should do quite well to increase the auburn in your hair. Have a hairdresser look at your hair and skin to be sure you get a shade that compliments your own natural coloring.

Why not go red or auburn then? You should be fine as you have fair skin. I think it would look natural on you.

try a temporary dye, take it on a test drive and if ya like it use a more permanent dye
