Will he eat pasta with tomato sauce? If so, tomato sauce is really easy to hide veggies in, you just have to chop them up small. Meatballs are another good one to hide them in. Also, my pediatrician told me to boil a bunch of veggies, and then boil pasta in the same liquid you boiled the veggies in - the pasta will then absorb the nutrients from the veggies.

put very little of 2-3 things on the plate. one thing should be something he really really likes. When he eats that he will ask for more. say ok but only when you eat 1 little bite of carrot. If he doesnt eat it then he gets no more of anything. and he may not eat anything else but he wont starve. Do it at lunch then at dinner let him eat whatever so he wont go to bed hungry. Keep doing that at lunch and after several days he will probably take a bite or two and gradually add a little more. I did this and it took a while but they eat lots more veggies. I still start out with very little on the plate and add more as they eat 2 bites of veggies first.

my son ate everything. For a while... then he got picky and refused to eat veggies that he had previously loved. Of course I worried that he wasn't getting enough vitamins, etc, but I found the best thing was to ignore it for a few days, 7 - 10 days without veggies is not going to kill him or deform him! Cutting them really small and frying them up with some rice worked for me. Now he is back on them, no problem. If you start to make an issue of it, they refuse all the more to do it!!!! His favourite is spinach and peas, and he also loves munching on vegetable samosas. Hope this helps you.

Some of these may sound kind of weird, but hey, if it works....
1. Offer him some type of dip for the veggies, whether it's peanut butter, ranch dressing, ketchup, whatever is his favorite. I'm amazed at what my daughter will eat if she had dip
2. Try doing mashed cauliflower instead of potatoes
3. Maybe use a cheese sauce over broccoli or other veggies
4. Take him to the grocery store with you and let him pick out some veggies to try. Doesn't matter what they are as long as he understands that he has to try what he picks. He feels like he has control, you are getting him to try new things and eat some veggies.

There's always V8 vegetable juice, or vitamin supplements (liquid). My mother used to put chocolate on pills I had to take for pneumonia once, and I took them with no problem so why not put something he likes on top of the veggies maybe like honey. There was a kid's fair today on tv that showed kids eating veggies they didn't like because the teacher made it fun by giving them one ricecake and making them decorate it with carrots for lips, green beans for eyebrows, black olives for eyes, etc. and the kids loved the idea. One kid said he couldn't stand cucumbers before but now, dunked in ranch salad dressing he just loves the cucumber taste.

All I did with all of my kids is made it a habit to give them fruits and vegetables a few times a day before age 1.By time they got to that dreaded picky stage they was use to eating vegetables and fruits.My neighbors 1 and 3 year old will not eat vegetables but was at my house the other night while we was eating dinner.All I said was MMMMM sure is good.They wanted to try it so I gave both of them a plate with a lil meat,mashed potatos and 5 teaspoons of green beans.those 2 kids sat and ate most of their meat,most of their potatos and all of their green beans and the 3 year old would say MMMMM good with every bite of green beans she ate.A toddler will get some of their eating habits from you.

Fortunately I didn't have this problem with my two year old. How I got him to eat fruits and veggies is use cookie cutters and cut the fruit into shapes for him and I would tell him that broccoli are little trees and he loves to eat his little trees he also like carrot sticks cause he saw a bunny eating some one time. It's hard to get your little one to like fruit and veggies, have you tried to give him like strawberry yogurt for the fruit or maybe some kind of dip for the veggies?

One thing my mom did was puree them into soup. Didn't work so well with green things, but other stuff blended pretty well. And there also a new juice by V8 that gives a serving of fruit and a serving of vegetables with each glass, and it tastes fruity, not like veggie juice.

Take a jar of baby food carrots and throw it into their tomato sauce for their spaghetti. It gives them some more veggies too.

In the long run, young children will eat ANYTHING that they raise themselves in a garden. In the short run, you have to give each veggie and yukky food a gross name. Peas are "Martian Turds". Cottage cheese is "Elephant Snot". Brussel Sprouts are "Dinosaur Eyeballs". After the child gets the hang of it, let him start naming the food. Whatever he names, he'll eat. Works.
