Doing favors yourself is certainly fine, but I personally would not tackle such a large job as chocolate-dipped apples at such a stressful time in your life, unless you have some professional culinary training.
I once was a part of an organization that made caramel apples for a fundraiser, and we made 250 or so-- it was a HUGE undertaking, very messy, took up a lot of space and was time consuming even with 15 or so helpers.
So I'm just suggesting you might want to choose something a little simpler.

I think it's fabulous that you would like to make your favors yourself! What a very nice touch to really let your guests know you appreciate their being there!
I did some looking and most of the chocolate covered apple recipes I could find suggest the apples should be refrigerated until serving. That may cause you a bit of an issue.
Perhaps you could shift a little with your idea... If you're doing apples because they are in your theme, you might want to consider canning some apple butter. If the red is in your theme, consider strawberry preserves. You could order the jars pretty inexpensively, you'd need some paraffin wax to melt and put on the top and decorate the lids with a sticker with the date of your wedding. Maybe even tie a tulle bow around the neck of the jars. You could do batches at your leisure, not worry about storing them and just place them out when the wedding arrives.
I've sourced the best price I can find on the little jars and wax as well as a preserve & apple butter recipe I have used before that are very simple.

How many people are you having at your wedding? I would worry about the time of the apples as they are perishable. If its a very small wedding go for it. My sis recently made chocolate dipped strawberries for my Nephews class (she made them to look like roses (very easy she did it with a kindergartener and a preschool child) we were told they probably wouldn't last more than a few days.
For my wedding I made wine glass candles (very easy) just warmed up gel wax and poured in (I scented it like vanilla but you can buy apple scent too and I dyed them green or blue)
you could get little pots and start seedlings of your fav flower,give away trees samplings (you can get these at many greenhouses), do mini pic frames with a pic of you and your hubby on the front and a verse or saying on the back then string them for Christmas ornaments. There are also many ideas involving candy. I also made chocolates for my guests (very easy) I hope some of these Ideas help you.

Chocolate dipped apples? How cool! It sounds like a great idea but depending on how many you have to make it could be expensive (and messy, ha!)
I just made some favors for my in-laws 50th anniversary party by purchasing Hershey's Symphony bars in bulk, removing the wrappers and replacing them with a custom label that I made on the computer. I put an old black and white picture on them and wrote "Sweet Memories" and their names and the date. They turned out really cute and original!

I think chocolate dipped apples will make a mess on the tables. It could be costly to you, if you are renting the covers. Do a web search for favor ideas and see if you can find a more pratical idea. Are you sure you have the time? This is something that should be done just a day or two before the wedding. Maybe go to a cake decorating store that also carries candy supplies and see what you can do with suckers. You could personalize them. I'm sure they would have some great ideas for you.

I would say choose something that you can make ahead at least 2 weeks before your wedding. You are going to be a busy lady after that. Also, someone has to get all this stuff to the hall and set it out. If its a perishable, it puts added burden on the bridesmaids or ushers who get the job. Candies and cookies are great. So are those tiny canning jars with cutesy lace doily lids and clever labels ---have seen everything from M&M's, mints, jellies to candle wax/gel in them. And the contents can be coordinated to give off the color scheme of the wedding (ie blue candies or yellow mints). good luck

I made bookmarks with a thank you for coming message for the guests. It cost me $13 for 125 bookmarks.
I don't like chocolate dipped apples (I prefer caramel). But either way, it's a unique favor that I haven't seen done before.

Keep it simple!!!! Get some foil wrapped mints, stack 4 on top of each other and tie a ribbon around and tie with a bow at the top (I mean tie it like a Christmas present, you know what I mean!!!) then slip a small flower under the knot of the bow. Hand them out while coffee is being served and they will all get eaten, no wastage!!

Have you seen the Chocolate Kiss roses? You put two Hershey Kisses back to back, put some floral wire down to make a stem wrap with floral tape, add a couple of silk leaves and wrap saran plastic wrap around the kisses and you have a rose!
