I love Irish Potatoes too. I boil 6 red potatoes in their skins for about 25 minutes to 1/2 hour. Then I remove the skins, and cut them into irregular 1 inch pieces. Melt about 6 to 8 tablespoons of butter in a saute or frying pan, add 2 to 3 teaspoons of fresh or dried parsley, 1/2 tsp salt and the potatoes. You can add more butter, parsley and salt to taste. Cook for 8 minutes over a medium flame without browning. The idea is to coat the potatoes with butter, salt and parsley but not to get them brown. The potato starch will naturally bind with the other ingredients to make a lovely flavor.
