Sorry, no gastro-intestinal explosions. You may get sick from all the soda but the Pop Rocks won't create an explosion.
Mythbusters did a show on this and even without burping they couldn't get an explosion.

The only way it would blow up is if there were no exits for pressure to escape. Lucky for you, the human stomach has two ways for pressure to go. Up or down. Either way, you're up for an unpleasant few minutes.

You need to watch Mythbusters. They have tested this myth and they busted it. It was in the pilot episode of Mythbusters. It is a great show and the hosts Adam and Jamie are pretty funny.
