I made individual pineapple upside down cakes in a nonstick pan. They didn't form that nice gooey syrup that usually happens when you make it. It just seemed to "steam" and not brown. They tasted good ...but NO gooey stuff. What should I do differently

Check to see if you used enough brown sugar and if the pans you used are conducive to pineapple upside down cake. Not all pans cook the same (which I found out recently trying to make chocolate lava cakes!)

Not sure how you make it, but I use melted butter and a bunch of brown sugar. That's what goes with the pineapple.

Did you lay the pineapple rings on top of a bed of melted butter and brown sugar, THEN top w/ cake batter? If not, that's your problem!

You may have not used enough brown sugar, or not have cooked it long enough for it to carmelize. Re-read the directions again. Good luck.
