Other than why food is processed, what are the benefits for the consumer (or are they the benefits?)? I can look anywhere and find the bad side of processed foods, but no-one advertises the good side... Thanks :)

Try frozen processed vegetables.
1. There are no additives used in the process just water for cleaning and frozen air to freeze.
2. Frozen vegetables do not have bacteria problems like fresh produce because they are blanched in hot water or with steam before freezing.
3. Frozen vegetable usually have more vitamins and minerals than fresh because they are frozen within hours of harvest (they are preserved by freezing) whereas most of your fresh vegetables are many days older before you get them. (causing them to lose valuable minerals)
(even though the frozen are blanched not that much of the vitamins or minerals are lost)

How is that for processed?

It is all about convenience! Sometimes when you get home from work you don't feel like making a meal from scratch, so you get a little help from your buddy Chef Boyardee!
