Zest is the outermost part of the lemon peel, the part that is yellow. To get lemon zest, you can use a zester, sharp paring knife or vegetable peeler to remove the zest. If you are using a knife or peeler be careful not to get very much of the pith (the white part under the zest). The pith is very bitter, and if you leave too much on the zest it can ruin the flavor of the bread.

Lemon zest is the fine scraping of the lemon peel just to the white part below the yellow color without including it. There are small graters that can be purchased just for the purpose of zesting.

Zest is merely the rind that has been finely grated. Use the side that has the tiny holes on your hand grater or whatever size the recipe calls for.

Lightly scrape your lemon on the small holed side of a grater. Just be sure to only scrape a couple of times (so you don't get the white part) then turn and continue on. A toothpick works well to get the lemon off the grater.

They have a kitchen tool called a zester or u can cut it off making sure not to get the white bitter part and cut it the way u need it

use a greater and great only the skin of the lemon, if you great the white part under the skin it will be bitter.

use a lemon zester, or use a knife to peel off JUST the yellow part...NO WHITE. chop it finely.
