Chocolate Covered Strawberries with Nuts
quart of strawberries with fresh green stems still attached
4 to 6-oz bar of bittersweet chocolate
4 oz. pistachios, blanched almonds or other favorite nuts (optional)
skewers
1. Rinse the strawberries and let them dry.
2. Break up the chocolate and place in a glass bowl. Place in microwave and heat 1 minute. Check the chocolate, if it isn't melted place back in for 30 seconds.
3. If using pistachios, remove the shells and skins and chop finely. Chop any nuts you plan to use finely. Spread on a plate. 4. Put the strawberries on the skewers stem side down. Use one strawberry per skewer.
5. Dip the strawberries in the melted chocolate, then in the nuts.
To serve:
Place the strawberries in a vase or arrange decoratively on a plate.
Chocolate-Covered Oranges
fresh oranges
"grain-sweetened" chocolate chips
(sweetened with barley malt--available in natural food stores)
1.Place a piece of parchment paper or silicone baking mat on a tray or cookie sheet.
2.Peel the oranges and divide them into segments. Carefully clean off any strings or white pith so you have a beautiful clean segment.
3.Melt the chocolate chips slowly in a double boiler, stirring constantly with a wooden spoon, until they are just melted.
4.Remove the chocolate from the heat and dip each orange segment halfway into the chocolate, leaving the other half uncoated.
5.Place the dipped segment on the tray.
6.Once all the segments are dipped, place the tray in the refrigerator for about 15 minutes so the chocolate will cool and harden.
You can make these about an hour in advance, but they do not keep well.
