Tomorrow night is fish night. Defrosting the Tilapia and I am doing the usual, browning it in basting oil and then baking it till it flakes. If anyone can pass on their favorite sauces for fish (preferably Tilapia) it would be greatly appreciated. I don't have much ingredients, but I can work on that. Looking for something creamy, tangy, and goes well with rice or pasta. Thanks.

INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Pasta a la Carbonara (Pasta with Garlic Cream Sauce and Prosciutto)

Ingredients:
-whipping cream (not whipped cream!!)
-olive oil
-butter
-about 4 garlic cloves
-4 egg yolks
-chopped proscuitto or bacon (optional)
-parmesan cheese
-1 package pasta, preferably penne

Directions:
In a large bowl, mix about 3/4 cup of whipping cream with the 4 egg yolks. Add parmesan cheese. Set aside.

In a small saucepan, sautee the garlic cloves, chopped in half, in the olive oil until they are soft and translucent. Include the proscuitto/bacon if you are using it. When the garlic is done, take off of flame. Remove the cloves and discard (the garlic flavor is now in the oil). Add about 1 tbsp butter to the oil and stir. Let cool for a few minutes. After about 10 minutes, mix in with the egg and cream mixture, and blend well with a fork or whisk.

When pasta is cooked and drained, add it to the bowl on top of the sauce and toss the pasta to coat it with the sauce.

Dill Sauce for Fish

Ingredients:
1/2 cup mayonnaise
2 tablespoons prepared mustard (French's or equivalent)
1 tablespoon lemon juice
1 teaspoon A-1 Steak Sauce
1/2 teaspoon dill weed (if fresh use more)
1 dash salt (can be omitted)
1 dash pepper (can be omitted)

Wisk all ingredients together.
Chill for at LEAST 4 hours to combine flavors.

Very easy Tartar Sauce
1/4 cup Kraft Miracle Whip
1TBSP lemon juice
1tsp green sweet relish
pinch garlic powder
pinch onion powder
Tastes great on Sole and Tilapia
Can be increased

the sauce i like is for salmon- i bet it'd be good on tilapia I've just never had it!

sour cream
dill (the spice)
a little lemon juice

mix it (there should be a fair amount of dill) and refrigerate. the sauce is better set for a few hours. but doesn't have to be

Well, an egg white sauce goes with a lot of fish... Hard boil one or two eggs (depending on quantity needed).... Make a basic white sauce (two tbs margarine or butter, two tbs flour, one cup milk, salt/pepper to taste). Melt margarine. Add flour, salt and pepper [I also throw in a pinch of dry mustard to add zip] and heat until it makes a bubbly thick paste. Add milk. Stir constantly over medium heat until mixture approaches a boil and thickens. Throw in chopped up eggs and stir until thick. Serve over fish. Yummy!

ps - good for two... I add more milk. butter, flour for 2 - 4 servings)

cook the fish like you always do . heat 1 can of cream of onion soup,while heating add 1tbs dry mustard/1tbs thime/pinch of cumin/half cup thousand iland dressing simmer 3 mins.spoon over rice an tilapia.eat while hot, with garlic bread.
