Hello Dollies
These creamy bars are loaded with goodies--chocolate, coconut, graham crackers, and walnuts.
• 1/2 cup butter
• 10 whole graham crackers, crushed
• 1 12 oz pkg chocolate chips
• 1 8 oz pkg shredded coconut
• 1 can sweetened condensed milk
• 1 cup chopped walnuts
Method:
Melt butter and pour in a 9 x 13 casserole dish. Spread graham crackers evenly over butter. Spread chocolate chips over crackers, then coconut over chips. Evenly pour milk over coconut. Sprinkle walnuts over milk and bake at 350 degrees for 30 minutes.

NO FLOUR PEANUT BUTTER COOKIES
1 cup smooth peanut butter
1 cup granulated sugar
1 whole egg
Believe it or not, this is all it takes. Don't add anything else!
These have the same taste as those chocolate covered peanut butter candies from Reeses!
In a medium bowl with a wooden spoon, beat peanut butter until it becomes slightly creamier. Add sugar and mix well. Finally, add the whole egg and mix.
When well blended, drop by spoonfuls onto a greased cookie sheet or spray with cooking spray to prevent from sticking.
Bake at 350°F degrees for about 12-15 minutes or until you see them golden brown at the bottom.
Makes about 12 cookies. You can double the recipe.

Chocolate Mousse in a Minute
INGREDIENTS:
1 cup chocolate chips
1 egg, room temperature
1 teaspoon vanilla
1 cup cream
whipped cream
PREPARATION:
Place chocolate chips, egg, and vanilla in blender and chop. Heat cream until very hot and small bubbles appear at edge. Do not boil. With blender running, pour in hot cream. Blend until chocolate is melted and mixture is smooth.
Pour into dessert dishes, cover with plastic wrap, and chill. Serve with whipped cream and shaved chocolate garnish, if desired.
Serves 4

Ice Cream Sundaes
Idea:
Prepare your brownie mix. (I like to add a bag of peanut butter chips to the mix. Regular chocolate, chocolate mint or even butterscotch will work, as well. Once cooled, cut the brownies into 3" squares or use a cookie cutter for pretty shapes. In soup bowls or any other wide bowl, place a brownie. Top with a scoop of ice cream. Pour heated hot fudge sauce over top. Put a whipped cream cloud on next. Sprinkle with salted Spanish Peanuts. Finish with a maraschino cherry.
Tortes
Idea:
(A torte has a couple of different definitions but for this example, it is a many layered cake.) Cut your pound cake into four equal layers, horizontally. Crush or chop several candy bars. Mix with the whipped topping. (Save some crumbs or pieces for garnish.) Frost the first layer with 1/4 of the topping mix. Repeat with the remaining layers. Frost the cake with the last 1/4 of the topping mixture. Chill until set. Garnish slices with leftover candy bar crumbs.
Trifles
Idea:
(A trifle is a layered dessert of cake, pudding, and topping, displayed in a trifle bowl or a deep glass bowl.) Prepare vanilla pudding according to package directions. Cut pound cake into 1" cubes. Layer 1/3 whipped topping, 1/2 cake cubes, 1/2 pudding, sliced strawberries, 1/3 whipped topping, remainder of cake cubes and pudding, blueberries and top with remainder of whipped topping.
*Lightly toasting pound cake, right before serving, will bring out all the wonderful flavors.
**Coconut and nuts keep well in the freezer.

Try coconut cream pudding. 350ml thin cream, 125g(1/2 cup)caster sugar, 4 sheets leaf gelatin(6 1/2g each), 300ml coconut cream, 1 1/2 tspn lime juice, mango puree(tinned or fresh made). Combine 200ml cream and caster sugar in a small saucepan over low heat until sugar dissolves. Soften gelatin in cold water, squeeze dry, add to cream and dissolve over low heat. In a bowl combine coconut cream and strained cream mixture, stirring. Refrigerate for 1 hour. Whip remaining cream until soft peaks form and fold into coconut cream mix, with the lime juice, divide between 6 150ml ramekins and refrigerate until set. Toast some shaved coconut and slivered almonds, turn creams onto plates, top with coconut and almond, spoon mango puree around base of cream and serve. YUMMY. If you have no coconut cream you can replace it with the same amount of liquid of anything else eg, pureed canned peaches, apricots, mango or passionfruit pulp. Or some coffee(cold) mixed with cream, a liqueur.

Baked Custard
INGREDIENTS:
2 cups milk
2 eggs
1/8 teaspoon salt
2 tablespoons sugar
nutmeg
PREPARATION:
Beat together milk, eggs, salt, and sugar. Pour into custard cups; place cups in a pan with hot water nearly to top of custard line. Sprinkle each with nutmeg and bake at 325° for about 40 to 55 minutes, until custard is set.
