My best friend had pain after breakfast, usually when she had honey on her toast.
She noticed that food or drink that was not bland, usually affected her the most. From her experience it was often the content, rather than the time of day. she became very tired when the pain started underneath her shoulder blades.
One night she had bad pain and nausea, and thought that she was having a heart attack. she drove herself to hospital, and the next day the surgeon performed keyhole surgery to remove the gallbladder. The following day she was home with no after affects, can eat what she likes, and reckons that she has not felt this good since she was in her twenties.
From observation, she sure looks healthy.

I have never had any gallbladder problems, but my poor mom did. She always got an attack in the middle of the night and would walk the floor trying to alleviate the pain. The only thing that helped her pain was surgery. Sorry.

My mom and the patients I've known didn't always have worsening pain in the evening. However, if you're eating a fatty meal, you will have more discomfort an hour or more after eating.

Be sure you're watching your fat intake. There are hidden fats in foods you wouldn't expect. Be a label reader. Drink plenty of fluids, like water, to flush your system.

My mom had her gall bladder removed because she got tired of the problems and feeling ill. Gall bladder surgery is much simpler these days.

i'm a surgical intern, so i'm going to answer this clinically.
most of my patients experience worse pain in the afternoon and often times after dinner. i contribute this to an entire day of meals and such. and you notice it more because you're not constantly having to do work and is resting.
i hope you have your gallbladder removed soon.
best of luck~

Avoid caffeine and all fried foods. Also do your best to avoid anything spicey. My sister had and still has problems with flour tortillas even after she had her gallbladder removed. I do hope you feel better soon.
