If you ask any photographer that's somewhat knowledgeable in camera gear what they crave for the most you'll probably get a majority stating that they would get Hasselblad if money was no object.
Problem is that money is sometimes an object. And not everyone can afford to shoot medium format, so 35 mm and it's digital equivalent's are the norm amongst professionals.
In the days of film Nikon was the undisputed 35 mm king. But ever since the auto focus became a standard in photography word was out that Canon's AF systems were a lot better than Nikon's. Since then it was just a matter of time before Canon became No. 1 and Nikon started lagging behind.
In the digital era Canon has been able to integrate sensor manufacturing to their cameras, while Nikon has mainly outsourced their sensors (to Sony) and has struggled with image quality because of this.
Before the D200 and D80 came about, there was not a single camera in Nikon's lineup that could challenge Canon's image quality. Right now it's really a close call, but many feel that Canon will soon release new technologies that will again leave Nikon behind a few years with some heavy catching up to do.
Why are Canon camera's so popular? Because they offer the best image quality, that's why.

Canon has been in business for a long time so it may not be just the features but also the quality of their cameras. When I go and make a purchase for things like cameras, stereos, video players and so on, I usually like to go to several sites, like Consumer Reports, because Consumer Reports and several others test all kinds of different products so you know that what they are telling you is reliable. I believe that this is what helped me to purchase my Canon Camera at the time because it was rated the best, not because of TV commercials and word of mouth sources. When you go and buy a new car do you just go out and buy it because TV commercials and ads tell you that it's the best or do you bring along an expert or put the car through a test first- like kicking the tires and checking the shocks, and doing fast acceleration and breaking tests to make sure all the parts seem to be working well? Consumer Reports and other product review companies are like having an expert beside you to help you make better decisions when buying new products. Canon has the double advantage- it's top rated and it also has all the "bells and whistles" too! The only negative thing I would have to say is about certain Canon models like the S50 to 70 and higher I believe. This is a complicated camera that you really need to work at learning how to use it because it's quite technical; but once you learn it, and practise with it, you can take very nice high quality pictures with it.

Sony is not as well established as Nikon or Canon. And although many cameras use Sony sensors, that is just a single electronic part, and actually produced by a different division in the Sony conglomerate. Also, a sensor in itself does little. The "magic" in the camera is the processor that converts the signal from the sensor into a photo. That is where Sony is lacking behind Nikon and Canon; they just don't have the experience as the others to make high performance processors. And as you indicated, the lens selection is lacking with Sony. Their lenses are more or less consumer-grade, and they lack the high-performance professional lenses that Canon and Nikon have. Finally, Sony is putting their future into the NEX/Mirrorless cameras, so their DSLRs are not their future focus.

Well for the most part their camera quality is excellent compared to the coutner part of American camera. HP, Kodak are both horrible cameras if you have ever compared the quality side by side. They do not lack on quality.

I learned on a Cannon AE1. It was phenominal. It had full manual settings which meant you can add very subtle effcts to your pictures by changing the f-stop and film speed.
