Get some sugar-free (and totally unsweetened) cornflakes and some grated cheese - roughly equal quantities. Crush the cornflakes and mix in the cheese.

Pat dry any moisture on the chicken legs, then dip each leg in beaten egg and then the cornflake/cheese mixture, pressing it in so you get a good all-round coating. Then bake in a hot oven - start the oven at high, and turn the chicken legs over after a few minutes, because you want the casing to 'set' - and then turn the oven down to medium so that the meat cooks but the outside mixture doesn't burn.

It's surprisingly tasty. When I first tried it I didn't believe that the coating would stay in place, but it does, and you get a very pleasant contrast of textures and flavours.

SPICY CHICKEN LEGS

2 tbsp. vegetable oil
2 cloves garlic, minced
2 onions, chopped
1 c. chili sauce
1/3 c. brown sugar
1 tbsp. Worcestershire sauce
1 tsp. celery seeds
1/2 tsp. salt
6 to 12 chicken legs

Heat oil in pan. Cook garlic and onion for 3 minutes. Add chili sauce, brown sugar, Worcestershire sauce, celery seeds and salt to pan, and bring to a boil. Cook slowly for 10 minutes. Place the chicken legs in a large oven dish, side by side in a single layer. Pour sauce over the chicken legs and cook in a 350 degree oven, uncovered, for 1 hour. Turn a couple of times while baking.

This recipe is easy and everybody LOVES it!! In a crock pot, place 6 chicken legs, a 12 oz jar of salsa, a can of black beans (drained), chopped onion (medium), small can of yellow corn (drained) and 4 oz of chicken broth (I like low sodium). I cook on 4 hours (high) and at the end, through in uncooked brown rice for about 10 minutes. You really can add whatever ingredients you want to spice it up. But it's quick and easy for us.

boil on stove thill no longer bloody and pink then put on a rack over a pan to catch the fat and put in oven at 400 degrees then season chicken with seasoned salt garlic pepper parsley and let the roast and crisp for an hour till their sizzleing and crispy serve with cajun rice or spanish or red beans and rice or potatos or any thing u want

brown chicken legs in fry pan with just a little olive oil

add 2 can of diced tomatoes
1 onion chopped up
1 tablespoon minced garlic
salt and pepper to taste

cook on high until start to boil

turn to low cover for approx 2 hours

serve over rice

in the oven or on the grill. we found this sauce in the asian section of the grocery or at the asian market. it is usally called sweet hot sauce it is red or orange in color & is a little hot when the legs are almost done, just pour some in a bowl & dip the legs in it & return it to the grill or oven to finish cooking . enjoy!

I have a couple--good old Shake and Bake is always ideal served with a side of Stove Top stuffing--also, use a coating of onion soup mix--delicious. You might also try dipping them in Miracle Whip and then in seasoned bread crumbs or crushed corn flakes and then baking them. Also delish.

put them in a baking dish and smear with barbecue sauce. cover and bake 1 hour- 1 hour and 15 minutes at 350 degrees.
