I love to add mandarin oranges and pineapple tidbits to a mixed greens salad. Plus, I add the juice from the pineapple to ranch or bleu cheese dressing to add a sweet, tangy kick.

I LUV a good salad and this is what i make at least 3X per times per week for my hubby and I for lunch:
Mixed greens from Sam's Club or another bagged lettuce
Shredded Carrots
Real Bacon Bits
Finely diced cauliflower or broccoli
Finely diced onion (not much)
Shredded Mozzarella Cheese
Finely diced boiled egg (about 1/2)
A couple of diced jalapeno slices or banana pepper slices
Leftover meat (chicken strips or lunch meat)of some type diced and added (just a bit)
Top w/ a mixed dressing of ranch and italian w/ a touch of Tiger Sauce
Last ..top w/ about 4 crumbled crackers or some bread crumbs and some freshly ground pepper.

I use an organic spring mix from Costco, and add fresh basil, mozerella balls, cherry tomatos, strips of yellow pepper, red onion, julianned carrots, walnuts and dried blueberries. I dress it with a homemade balsamic dressing.

depends on whether i want something simple or something sweet. i can do organic greens with tomatoes, red onions, cucumbers, boiled eggs, black olives, maybe some chicken, carrots & celery, OOOOORRRRR, organic greens, strawberries, pears, walnuts, tomatoes, red onions and maybe some chicken - either way, i make my own dressings.
