The professional way to make fluffy mashers or whiped potatoes is to use red or yellow new potatoes. Purple and "Youkon Golds" make niffty potatoes as well. I start by boiling the potatoes (1- 1 1/2 pounds cubed to roughly 2 inch) in lightly salted water (about 1 teaspoon per quart of water) until the largest chunk will slide off a sharp knife. Drain the potatoes and while they are still hot add 1/4 cup of salted butter, 1/2 cup of sour cream and 1/4 cup of cream or milk. Mash and whip with an electric mixer or an upright mixer with a paddle attachment until smooth. For regular mashers add salt and pepper to taste, for garlic mashers I add Lawrey's Garlic Salt insted of regular salt. For "Loaded Mashed potatoes add crisp bacon, chives or the green tops of scallions (green onions) and sharp cheader after the potatoes have cooled a bit to keep the cheese from melting to much.

Make the mashed potatoes, creamy with butter, sour cream, milk, and lots of cheese. When you add the powdered garlic, it makes it taste incredible!

Every year for Thanksgiving, I get asked If I am making the yummy mashed potatoes, I say yes, since that's the only time I want to splurge on the calories.

I see you have lots of answers but none were done the way I do them, so thought I'd give you another choice. I use red potatoes quartered in salted water, I then peel 2 or 3 cloves of fresh garlic (use as many or as little as you want - depends on how much you like garlic) and add them to the pot of water and potatoes. Boil til tender then mix with blender (add a little milk or cream and butter). I don't over mix (there nice if theres a few small lumps) Season with salt and pepper---Tastes great!
