I just made a loaf yesterday. Basically, you leave out the yeast and use baking soda instead of the yeast. The remainder of the recipe is the same.

Irish Soda Bread requires only a few simple ingredients: flour, baking soda, salt and buttermilk. Throw in a cup of raisins if you like, and some orange zest, too. Traditional Irish Soda Bread is made without these, however, as it was made as a daily bread to accompany meals. Enjoy the original version warm with a little low fat spread with some tea, or as an accompaniment to a lean beef stew.
INGREDIENTS:
3 cups all-purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt
1 1/2 cups low fat buttermilk
PREPARATION:
Preheat oven to 375 degrees.
In a large bowl, stir dry ingredients together with a whisk. Make a well in the center and add 1 cup of the buttermilk, reserving 1/2 cup. Combine dry ingredients and buttermilk with a fork, gradually adding more of the remaining liquid until a soft dough is formed.

One hundred fifty years ago it was common to make bread using baking soda rather than yeast in parts of rural Ireland.
That's where Irish soda bread gets its name.

The practice of using baking soda started out of necessity. Yeast won't make dough rise unless the baker uses "strong" flour, which was scarce in parts of Ireland. Baking soda, however, could be counted on to leaven bread. The baking soda has to be combined with something acidic in order to do its magic. In this case, we've used buttermilk.

So, not only is this a historic and tasty recipe; it's pretty foolproof, too.

Ingredients


2 cups white flour
2 cups whole wheat flour
1/2 cup sugar
2 tsp. baking soda
1 tsp. salt
4 tbsp. butter, chilled
1 cup raisins
1 1/2 cups buttermilk or plain yogurt

Directions


Heat the oven to 350 degrees. In a bowl, combine the dry ingredients.

Cut in the butter until it is pea-sized. Stir in the raisins and buttermilk or yogurt. Turn the dough onto a floured surface, knead 1 minute, and shape into a disk.

Cut an "X" in the top and bake on a greased baking sheet for 45 to 50 minutes.

Makes one 8-inch-wide loaf.

For a CLASSIC Soda Bread

225g plain yoghurt (live is good)
250g plain brown flour
1tsp salt
1tsp bicarbonate soda
2stp sugar

Mix all the ingerdients in a bowl until you can form into a ball.

Preheat the oven to 230C and place the dough on a lightly oiled baking tray making an x-shaped cut about 2cm deep into the centre of the dough. (this allows the soda to work)

Bake in the oven at 230C for 12mins then turn down the heat to 180C and cook for a further 20mins or until when you tap the underside of the loaf it sounds hollow.

Serve with unsalted butter and very mature irish cheddar.

I know you have a lot of answers already, but here is an Easy recipe. It is baked in a round loaf.

Easy Irish Soda Bread

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine, softened
1 cup buttermilk
1 egg
1/4 cup butter, melted
1/4 cup buttermilk

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.

In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.

Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

1 pint sour cream
1 cup raisins

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.
Mix the flour, sugar, baking soda, baking powder and salt. Add the eggs, sour cream and raisins and mix until just combined. Distribute batter evenly between the two pans.
Bake loaves at 325 degrees F (165 degrees C) for 1 hour.

1/2 cup currants
3 1/2 cups all-purpose flour
1 3/4 cups cake flour
1/4 cup sugar
1 teaspoon baking soda
2 teaspoons fine salt
1/4 cup unsalted butter, cut into small pieces and chilled
1 1/2 cups buttermilk

Position a rack in the middle of the oven and preheat to 400 degrees F. Lightly butter a baking sheet.

Put the currants in a medium bowl and cover with hot water. Soak for 15 minutes and drain.

In a large bowl, whisk together the flour, cake flour, sugar, baking soda, and salt. Add the butter and, using your hands, work it into flour mixture, until it is about the size of small peas. Stir in the currants.

Add the buttermilk and stir with a spatula, just until the flour is moistened and comes together in a shaggy dough. Turn the dough out onto a floured work surface and knead lightly until just smooth, about 1 minute. Form the dough into a ball and place on the center of the prepared baking sheet.
Using a sharp knife cut a 1/4-inch-deep "X" into the top of the dough to let the fairies out. Bake until well browned and the bottom sounds hollow when tapped lightly with your knuckles, about 1 hour.

Transfer the bread to a rack and let cool completely before serving.

Preheat the oven to 375 degrees.

In a large bowl, combine the flour, baking powder, baking soda and salt and mix well. Cut the butter and shortening into small pieces and add to the flour mixture. Using your fingers, work the cold butter and shortening into the flour mixture until it resembles coarse crumbs. Add the egg, the buttermilk, the currants and the caraway seeds and mix into the flour mixture until it is incorporated. Turn the dough out onto a floured surface and knead gently until the dough forms a smooth ball. Place the dough into a lightly greased loaf pan. Score the top of the loaf with a very sharp knife. Brush the top of the loaf with melted butter. Sprinkle with sanding sugar. Place the loaf in the oven and bake for 40 to 45 minutes or until golden brown.
