A few days ago I made a marinara sauce and it turned out very flavorful and tomatoey. Today, I did the same recipe but the sauce looked a little orange and it didnt taste as good.

IMHO, you can't overcook spaghetti sauce, although you can burn it. I simmer my homemade sauce for hours, three minimum. I've been known to simmer it all day. It's one of those things that get better the longer you cook it. (Add more tomato juice, beef broth, or water if it gets too thick.) BUT if you cook your sauce at too high a temperature, you can burn it, and that ruins the whole batch. Just dump it out and start blanching more tomatoes.

(The orange color probably came from too much fat taking on color from the tomatoes.)

You'll never cook the same sauce twice!.....and yes you can overcook it or at worst.....burn it. The orange look you seen is just the light refracting off the oils.

Certain spices loses their " potential' with so much cooking, My advise would be to LOAD the meat with the spices and add right before the last 20 minutes.
If you cook the meat in a high garlic area it will be much more tastier!
pay attention to your cooking cause who knows, you may come up with a recipe that could change the worlds consumption!

I don't think you could really overcook it, it will just keep getting thicker and tastier. It sounds like you added too much water. Maybe your pasta was too wet.

...not sure how you got orange lol I cook my sauce over night low temp but if the temp is to high is gets dark and tastes bad...

sometimes you can burn the sauce and if you do add a lemon to it and water will brang it back sometimes

yes it can burn. have black burnt pieces in it. and the flavor isn't as good over cooked.
