I recently entered in the Johnson and Wales 2007 Teen Chef contest. One of the requirements was that a starch had to be included. I had julienned butternut squash in my recipe thinking that it was a starch. I was very upset today when i found out that my recipe was considered incomplete by the judges because of a lack of a starch. If anyone could shed some light on the subject it would be greatly appreciated. Maybe i was wrong though. Thankful for any input.

sorry to say but it is a veggie. most of your pastas are considered a starch (macaroni, spagetti noodles, egg noodles, etc). potatoes, rice, flour are starches also. good luck in the contest

It is a vegetable as far as I am concerned but you might consider it a starch because of the high natural sugar content is where all (most) the calories come from.

Squash is a vegetable. Starch is found in rice, potatoes, grains, etc.
