First off condolences on your granddad! Broccoli salad is really easy just the florets with raisins, sunflower seeds, bacon bits and for the dressing it is salad dressing(mayo) with a few teaspoons of sugar and a splash of vinegar mixed up and tossed through your other ingredients. Even my kids like that one. A simple green salad with a few different dressings is easy and you could finish it off with a fruit salad.

try a pasta salad using macaroni. boil macaroni, rinse in cold water, add tomato, cucumber, onion, any raw veggie, mix in ranch or italian dressing. yummy coleslaw is another good salad and three bean salad. three bean salad is green beans, kidney beans, and yellow wax beans mixed with vinegar, 2tbps sugar and 1/4 cup water. (1 cup vinegar) taste to make sure not to sour and if it is add another tbps sugar. so sorry about your loss wishing you all well.

Jelly salad, with mini marshmallows. All it is, is jell-o, mini coloured marshmallows, and dream whip. Real simple and delicious.
You could also make a pasta salad with some fresh cut vegtables thrown in.
