Just use a regular cake pan instead of the bundt pan and adjust your cooking time as some of the reviewers noted. It holds together well and tastes great. It also doesnt seem to crumb nearly as badly as some so its easier to decorate.

Also Carthecook (a reviewer on that cake) said the following that I found works well:
cream the butter, shortening, and sugar for 25 mins, so its light and fluffy ( that is the secert to a great cake base). Then add 1 egg at a time and beat for 30 seconds apeice. Add 1 1/2 tablespoons of vanilla extract and 1 teaspoon of lemon extract. I also added 1 tablespoon of corn starch for each cup of flour (the cornstarch turns the all-purpose flour into cake flour). Last but not least I made some sour milk by adding 1 tablespoon of vinger and 1/4 teaspoon of vinger to the milk and let it turn while I was creaming the first 3 ingredients (sour milk is just homemade buttermilk). Be sure to start and end with the dry ingredients. Do not over beat when you start adding the dry ingredients or the cake will be tough. Bake the cake at 325 degrees for 90 mins, but start checking after 60 mins. The last 20 mins I tented the cake with foil shiny side up away from the cake.

you can make two vanilla cakes and join them together by a bead of icing around the top of one with jelly or fruit in the center then cap it off with the second cake then ice as smoothly as possible place in freezer for a short time just to firm it up some then re -smooth carefully then continue to decorate experimenting with your icing equipment and freeze your results before placing on the cake

do you have to make it from scratch? just use store bought cake mix... that's the easiest.
