Let me try to answer this...
There are two types of laws in Judaism: Halachot and Chukim (laws based on reason and laws without reason). For instance, we can reasonably understand why thou shalt not murder or steal. But we cannot understand why, for example, you shouldn't mix meat and milk. The law of shatnez, which you cite as disallowing linen and wool to be mixed, has no reason other than 'because God said it.' It really is a test of faith for the Jew.
Be careful not to assume that every Jewish law has a clear and obvious reason. Some people have made up silly explanation for keeping kosher, like, 'pig is really bad for you.' Pig is not unhealthy and it is quite tasty. But God put forth that law and it's not our job to question it.
There have been some explanations about shatnez--linen and wool--based upon the metaphysical system of Kabbalah and some ultra-orthodox Jews use that as a reason. Others note how when God said "thou shalt be holy" he was referring to separation between Jew and Gentile and therefore we must be careful to maintain strict separation between those things not meant to be together (Jew/Gentile, milk/meat, linen/wool, ox/donkey etc.). There are dangerous racist overtones there but many sages and talmudists have bought that line.

I've also had the pleasure travelling to Israel several times for work and vacation. I almost became Jewish, actually, until Christ reeled me back in. yes it is, its friday today ,,,,, its after 8pm in the uk and Im in greece and its 10pm and its dark. I said unless someone Jewish from the staes could answer as its friday there too and the sun has not yet gone down

these are the laws proscribed to the Israelites because of their harsh treatment to their prophets, but when Jesus came in to this world and he had many good things to show them but the people as a whole were not fit to receive them cos of their ways.
nowadays these laws are proscribed and should not be practised, and their is no logic in the laws of old, cos those law were only for the Israelites of old and not to the world.
and yes Sabbath starts from Friday sun set.

Moses probably found something wrong with those things. he wrote most of their laws.
it's the same reason you can't work on the sabbath.
