If I am cooking corned beef for 2 1/2 hrs., when do I add the cabbage in?

Depends upon how soft you like your cabbage.

I like my cabbage to be very soft so I add it about 1 hour before the corned beef is done... If you like it firmer, crispier add it about 15-20 minutes before it's done.

Also, as an alternative, some people (my in-laws) don't like cabbage in the same pot as the corned beef. You can boil the cabbage separately about 15-20 minutes before the beef is done.

I like to cut the cabbage into quarters and add it to the pot the last 15 minutes of cooking. Otherwise, it gets over-cooked and mushy. The cabbage will be fine the follow day when you eat the leftovers.

Probably 45 minutes before the Corn Beef is done..you can add some peeled potatoes too.

About a half twenty to thirty minutes before you are ready to serve it. The cabbage is much better when it is not overcooked. It should be cooked to the tender stage but not to mush.

The last 20 minutes. Cut the cabbage in half, then half again, then half yet again. These should be big wedges. The toothpick idea is great and I will use that next time. Thanks.

last 15 min.....just made it last nigt....if you have toothpicks put them in the cabbage wedges and they will hold together well......!!!! it's some ymmy stuff.....you WILL be gassy though.
