Have to make something for a "fiesta" in Spanish class but I'm not much of a cook. Anything easy but not so predictable? (ie: Enchiladas, quesadillas")

This is a great recipe for a bean dip -- that always gets rave reviews:

1 lb. ground beef
1 small can of refried beans (I use the fat free kind)
1 package Old El Paso taco seasoning mix (it's the best)
1 8 oz. sour cream
16 oz. sharp cheese - shredded
1 jar Picante sauce - I use Medium or Hot

Prepare the ground beef with the taco seasoning mix - as the package describes. Simmer.

Pop open the refried beans and place in a glass casserole dish. Add the warm ground beef mixture and mix up. Add most of the jar of picante and mix. Arrange in the dish smashed down (technical term).

Open the sour cream and smear over the top.

Last -- add the shredded cheese on top.

Bake at 350 degrees for 30 minutes -- or until the cheese melts and the mixture is bubbly.

Serve with Tortilla chips -- Scoops are great!

Tostadas are almost always a hit. All you have to do is fry the tortillas flat (or purchase them that way). The beans are pretty simple to make too. Boil pinto beans until soft add salt, garlic, and onion while they boil. Just add until they taste good, but remember as the water dissolves the flavor will get stronger. You can wait until most of the water is gone or drain the excess and then mash the beans with a potato masher or hand mixer. Spread the beans on the tortillas and top to your liking. If you want to skip the bean making you can just buy the canned type. It's much quicker, but it won't taste as good. I hope this helps. Good luck!

I would bring in a 7 layer taco dip. It's easy, pretty & tastes great.

INGREDIENTS
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

You can omit the pepper and add a layer of prepared guacamole on top of the beans, if you wish.
Serve with a large bag of tortilla chips. The Tostitos Scoops are easy to use.

Tortilla soup...easy and not so common.

4 cups chicken broth
14 oz can of whole tomatoes
small can of green chilis
1/2 onion diced
5 cloves of garlic roughly chopped
1 tsp ground cumin
handful of corn tortilla chips
1 bunch of fresh cilantro
salt and pepper to taste
you can also drain and add a can of pinto beans if you like

throw everything but the chips and cilantro in a pot and gently boil for 30 minutes...toss chips in to finish and tear and drop in cilantro to serve

Make some taco meat and put it in the crock pot. Take shells and fixings.

Or, make ranchero beans. Also easy and cheap.

Or flan. Buy a box of flan and whip some up. Takes no time at all.

nachos are the best .. but i guess somewhat predictable... make aroz con leche... its pretty much wat it sounds like lol
