I really like the hush puppies at Cracker Barrel mostly because they are light and fluffy. The last time we had catfish I tried a recipe that I got from the internet but they were extremely dry and hard and had very little taste. Anybody know what I did wrong and how I can fix it? I'm making catfish again tonight and really want some hush puppies to go with it but don't want to waste them again (we threw the others in the trash, they were that bad). Any help will be appreciated!

When i make mine this is the way I do it.2 cups self rising flour---1 cup corn meal---1/2 cup chopped onions---1 egg---1/2 can cream corn---mix these together,add water if needed to mix.Mix should not be thin.Heat your oil & fry (one tablespoon makes 1 hush puppy).They will float to the top and be golden brown.I put a little cayenne pepper & garlic powder in mine.Hope this helps...

this is really east recipe enjoy

love them

3/4 cup corn meal
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1 egg
2 teaspoons bacon drippings, melted
1/3 cup finely chopped onion
Crisco or other vegetable shortening for frying
Combine all the ingredients together in a large bowl, and mix well.
Melt enough shortening in a skillet or deep fryer to completely cover the hush puppies. Heat to a temperature of 375°F. Drop batter by spoonfuls (approximately 1-1/2 inches in diameter), a few at a time, into the hot oil and deep fry until crisp and golden brown, 2 to 3 minutes.

Drain on paper towels, and serve at once. Makes about a dozen.

HUSH PUPPIES

1/2 cup flour, sifted
1 1/2 cups white cornmeal
2 teaspoons baking powder
3/4 cup milk
1 tablespoon sugar
1/2 teaspoon salt
1 small onion, chopped fine
1 egg, beaten

Combine all ingredients. Drop into hot oil, 1 teaspoon at a time, until golden brown. Serve while hot with fish.

EASY HUSH PUPPIES

1/4 c. yellow cornmeal
1/4 c. flour
3/4 tsp. baking powder
1/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. garlic powder
1/4 tsp. celery flakes
1/8 tsp. dried whole dill weed
1/8 tsp. ground red pepper
1 egg white, beaten
2 tbsp. skim milk
2 tbsp. minced green onions
1 tbsp. minced fresh parsley
Vegetable cooking spray

Place first 9 ingredients in a large bowl, stirring well to combine. Combine beaten egg white, milk, and oil in a small bowl, stirring well. Add liquid ingredients to dry ingredients, stirring just until blended. Gently stir in green onions and parsley.
Spoon 1 tablespoon batter into each of 8 miniature (1 3/4 inch) muffin pans that have been coated with cooking spray. Bake at 425 degrees for 15-20 minutes or until hush puppies are golden brown. Immediately remove from pans, and serve warm. Yields 8 small hush puppies. Does not rise while baking, so as much batter you put in the pan is as high as they will be.

Hush puppies
1 egg, lightly beaten

oil (for deep frying)




1. Heat oil to 375' Mix well the eggs,milk,and green onions.
2. in a separate bowl blend together the cornmeal, flour,salt, baking powder and soda.
3. stir the dry into the egg mixture.
4. drop spoonfuls (1 1/2 TBl. each) into the hot oil.
5. cook for 3 minutes (or until brown).
6. Drain on paper towels.
7. serve warm.
